(four to six servings)
1 pint ripe strawberries*, sliced
¼ cup balsamic vinegar
1 tablespoon granulated sugar
3 sprigs of fresh tarragon
In a mixing bowl, combine berries, vinegar, sugar and one sprig of tarragon. Allow to sit at room temperature for at least a half hour, ideally about 2 hours, stirring occasionally to help marry flavors. Remove sprig of tarragon. Remove leaves from other two tarragon sprigs and toss with berry mixture. Spoon over vanilla ice cream. Or anything else for that matter, it’s that good!
