3 tablespoons coconut oil or butter
1/2 cup almond flour (or regular flour for the traditionalist)
1 tablespoons of molasses, agave or 3 Tbsp raw sugar
1/2 cup milk
1/2 teaspoons vanilla extract
1/2 teaspoons sea salt
Preheat oven to 375 degrees F
Place 2 tablespoons of the coconut oil or butter into a 10-inch cast iron skillet, coat the entire surface by smearing and place in the hot oven. Make sure the skillet gets thoroughly heated (around 15 minutes). Place the remaining ingredients flour, sugar, salt, milk, eggs and the remaining 1 tablespoons of oil into a food processor and mix. You can also do this by hand quite easily. Just whisk thoroughly. Pour the batter into the preheated skillet being careful not to burn yourself and ruin your morning. Bake in the oven for approximately 20 to 22 minutes or until the edges are puffed and golden brown. Flip out of the pan (should come out with no effort) on to a plate using a spatula. Fill with your favorite fruit. Or whipped cream. Or better yet, ice cream.
