3-4 cups water with salt to taste
1 cup ground blue corn
Dried fruit, raisins, dates, favorite nuts or fresh blueberries
Sweeten to taste (fruit often sweetens enough)
Cook over low heat, stirring often, for half an hour or more. Serve with butter.
Blue corn porridge is very forgiving. If it becomes dry, just add water and stir it in to regain hot cereal consistency.
