(This recipe may sound a little odd, but trust me,

your guests will love it)

1 small watermelon, seeded and cut into “dominos”

4 ounces Chevre cheese, crumbled

2 tablespoons fresh mint, coarsely chopped or chiffonade

Juice of one lime

Coarse sea salt, to taste


Layer watermelon pieces on a serving platter. Crumble Chevre over the top. Sprinkle evenly with mint. Squeeze lime juice over salad. Sprinkle with sea salt and serve.
